Challenges in Sugar Production Food Safety Management Systems  Autor:

  The sugar industry is one of the largest among the food industry. One plant processes around 8,000 tons of sugar beet daily. It can be said that sugar is a strategic product and byproducts are valuable as well, since they are raw materials for other technological processes which are also important.

 

The author introduces the products of the sugar industry as well as the high product safety requirements. Due to the unambiguous impact of globalization on modern business, one of the requirements set in front of manufacturers is standardization and certification of food safety and quality systems. The book provides an overview of the GFSI Standards Global Food Safety Initiative and key factors which collaboratively drive continuous improvement in the FSMS system around the world with a vision „Safe food for consumers everywhere”. Further, it provides an overview of the impact of the globalization process on the sugar industry and the applied GFSI-approved schemes. The objective of this book is an individual analysis of the GFSI approved schemes (FSSC 22000, BRC, IFS). Other standards applied in the food industry are also presented (EMS, Kosher, Halal, SAI-FSA)

Biljana Bogdanović is a Serbian expert in the field of Food Safety Management, with over 20 years experience in Sugar Industry. She graduated from the Technology University in Novi Sad and currently is pursuing her PhD in Food Industry. She is constantly engaged in numerous projects regarding Food Safety as a consultant, auditor, and professor.
